
Potato pancakes, also known as latkes, are perfect for a snack or a quick meal. Popular as an appetiser or a side dish, this recipe only requires four basic ingredients and 20 minutes to prepare.
Since potatoes are starchy and oxidise quickly, rinse and drain the grated potatoes before combining them with the other ingredients for a crispy exterior instead of a soggy crust.
Serve with sour cream or applesauce for a burst of delicious flavour.
Ingredients
- 400g medium-sized potatoes, peeled and grated
- 1 large egg
- 1 small yellow onion, grated
- 3 tablespoons all-purpose flour
- 1 teaspoon salt or to taste
- 1 teaspoon ground black pepper or to taste
- 2 tablespoons cooking oil
- 2 tablespoons sour cream
- chopped parsley, for garnishing

Method
- Grate the peeled potatoes, then rinse and drain before combining with the egg and grated onion.
- Season with salt and black pepper and whisk the mixture together.
- Sift the all-purpose flour and add it to the mixture, stirring to mix well.
- Heat a skillet with oil on medium-high. Drop about two tablespoons of the potato mixture into the skillet and flatten it with the back of the spoon.
- Fry each side for five minutes or until golden brown.
- Dish out onto a plate lined with paper towels. Garnish with parsley and serve warm with sour cream or applesauce.
