Simple, nutritious stir-fried bean sprouts with tofu

Two main ingredients are all you need for a quick and easy meal that can be served with virtually anything.

Ah, the ever-popular bean sprout: is there a more simple, versatile ingredient? You can cook it in a variety of ways, stir-fried or in soups; as a main dish or as a garnish – and it will be delicious and healthy every time.

Here’s an easy recipe for bean sprouts with tofu, a refreshing vegetarian dish that goes well with practically anything. Serve it with rice or noodles for a quick and nutritious meal.

Ingredients

  • 225g bean sprouts
  • 1 piece firm tofu, cut into pieces cooking oil
  • 1-2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 stalk spring onion, cut into 5cm lengths

Instructions

  • Rinse the bean sprouts with cold water, drain and set aside. Remove the roots if you wish.
  • Heat up a wok and add some cooking oil. When the oil is hot, pan-fry the tofu until light brown on the surface. Transfer to a dish lined with paper towels.
  • Leave about one tablespoon of oil in the wok, then stir-fry the garlic until aromatic.
  • Return the tofu to the wok and do a few quick stirs before adding the bean sprouts.
  • Add the soy sauce and spring onions and do a few more quick stirs. Dish out and serve immediately.
