Easy-to-make no-bake cheesecake for kids

A few simple ingredients and some lemon juice will result in this refreshingly creamy, sweet and tangy treat for your young ones.

Everybody loves desserts – children, especially, will go nuts for this simple but addictive homemade cheesecake. With just a few simple ingredients and a bit of prep time, you can whip up this creamy delight with a lemon-zesty zing.

Fun fact: this recipe was inspired by a 1941 episode of the cartoon “Tom & Jerry” titled “A Midnight Snack”!

Ingredients

  • juice of 4-5 medium-sized lemons
  • 7g gelatine
  • 250g cream cheese, at room temperature
  • 50g sugar
  • 160g whipping cream
  • A few drops of food colouring (light orange)

Method

  • In a bowl, add the gelatin to 40ml room-temperature water and give it a good stir. Set aside for 15 minutes.
  • Meanwhile, cut the lemons into halves and squeeze them until you have 40ml of juice.
  • In a separate bowl, add the cream cheese and stir using a spatula or spoon until it achieves a creamy, smooth consistency.
  • Add the sugar and whisk until dissolved.
  • Put a pot or saucepan on the stove on medium heat. Add the lemon juice and let it simmer.
  • Add the gelatin into the simmering lemon juice and turn the heat down to low. Continue stirring until the gelatin has dissolved. Remove from heat and set aside.

  • Once the gelatin-lemon juice mixture has cooled, pour it into the cream cheese. Mix until everything is incorporated.
  • In another big bowl, whisk the whipping cream to a foamy consistency. Add a drop or two of orange food colouring.
  • Fold the whipping cream into the cream-cheese batter. Mix lightly until well combined.
  • Pour the batter into moulds and put them into the freezer for about 4 hours until set.
  • To unmould, gently pull away the sides. Next, push the bottom of the mould up to invert it and push out the cheesecake.
  • Serve and enjoy!

Tips

  • You may use passion fruit instead of lemons for a similar tangy treat.
  • Try serving some durian alongside the cheesecake for added flavour!
