In less than 20 minutes, here’s one way to transform the humble cucumber into a flavourful, spice-infused salad that’s perfect for any diet.
Ingredients
- 1 cucumber,
- 3/4 teaspoon salt or to taste
- 2 cloves garlic, minced
- 1 teaspoon apple cider vinegar
- 1 1/2 tablespoons sugar
- 1 teaspoon Korean or regular chilli powder
- 1 teaspoon chilli oil
- 1/2 teaspoon sesame oil
- sesame seeds for garnishing

Method
- Rinse the cucumber thoroughly and slice into pieces. Add the salt and stir gently. Chill in the fridge for 15 minutes.
- Combine the garlic, vinegar, sugar, chilli powder, chilli oil, and sesame oil. Stir to mix well, making sure the sugar is completely dissolved.
- Drain the saltwater from the cucumber. Add the dressing and toss well.
- Garnish with sesame seeds and serve immediately.
