Refreshing Asian cucumber salad with a kick

A quick, delicious meal that is also healthy is a godsend for those who lead busy lives.

In less than 20 minutes, here’s one way to transform the humble cucumber into a flavourful, spice-infused salad that’s perfect for any diet.

Ingredients

  • 1 cucumber,
  • 3/4 teaspoon salt or to taste
  • 2 cloves garlic, minced
  • 1 teaspoon apple cider vinegar
  • 1 1/2 tablespoons sugar
  • 1 teaspoon Korean or regular chilli powder
  • 1 teaspoon chilli oil
  • 1/2 teaspoon sesame oil
  • sesame seeds for garnishing

Method

  • Rinse the cucumber thoroughly and slice into pieces. Add the salt and stir gently. Chill in the fridge for 15 minutes.
  • Combine the garlic, vinegar, sugar, chilli powder, chilli oil, and sesame oil. Stir to mix well, making sure the sugar is completely dissolved.
  • Drain the saltwater from the cucumber. Add the dressing and toss well.
  • Garnish with sesame seeds and serve immediately.
