10 creative uses for leftover cookies

Leftover cookies? Is there really such a thing? Regardless, here are some yummy ideas.

Christmas is coming, a time when holiday cookies will be abundant. And while the notion of “leftover cookies” might sound ridiculous, it is possible to have too much of a good thing.

If you might find yourself with more cookies than you can manage and would like to use them up before they become stale, here are 10 cookie upcycling ideas.

1. Jam

This works best with jam tarts and mince pies. Scoop out the filling from each tart or pie and place it in a container. Mix it with a bit of hot water to dissolve it slightly, tasting as you go so it’s not too diluted, then place in the fridge overnight.

By the next morning, you’ll have yourself some tasty “upcycled” jam to spread on your toast.

2. Pie crusts

Mash your jamless tarts or mince-pie casings together with some butter and mould them into pie bottoms. Load them with your desired fillings, bake or refrigerate, and voila! Easy as pie!

3. Milkshakes

Add cookies, milk and ice to a blender and blitz for a delicious, refreshing beverage. Chocolate cookies work best, but don’t limit yourself.

4. Ice cream

Repeat the same steps for a cookie milkshake, then pour the ingredients into a container and freeze it to make your own cookie ice cream!

5. Trifle

In a glass or bowl, start with a layer of cookies followed by whipped cream. Add a layer of berries or your favourite fruit, and repeat the steps until the container is full. Top it off with whipped cream and enjoy.

6. Cookie pops

You might know of cake pops – round cakes dipped in a sweet sauce and set to freeze. You can do the same with cookies.

First, crumble them with butter and mould them into a round shape. Dip into your sauce of choice, such as dark or white chocolate, and freeze before serving.

7. Pudding

Mix your cookies with pudding for a delicious sweet treat with a combination of flavours and crunchy-chewy texture.

8. Bread pudding

For those who are feeling adventurous, try cookie “bread” pudding. Find a recipe for bread and butter pudding and substitute the bread with your leftover cookies.

9. Croutons (!)

For a unique taste, try garnishing your salad with cookie croutons. The crumble will add a sweet, crunchy yet chewy bite to your meal – though it might not be as healthy as it otherwise would have been.

10. Toppings

Really, this could not be any easier. Crush the cookies and serve them as toppings for ice cream. Use complementary flavours or be bold and experiment with different mixtures. Enjoy!
