
A frittata, which means “fried” in English, is an Italian dish similar to an omelette or quiche, and is usually loaded with extra ingredients such as vegetables and cheese.
This is a simple recipe for a thick, fluffy frittata with thin slices of zucchini and sweet corn kernels. It’s suitable for a healthy breakfast, a quick lunch, or dinner for the entire family – all in under 15 minutes.
Ingredients
• 6 large eggs
• 6 pinches salt
• 1 1/2 tablespoons oil
• 1/2 onion, sliced
• 1 zucchini, about 225g
• 1/2 cup frozen sweet corn

Method
- Preheat the oven to 205°C.
- Crack the eggs into a bowl. Add the salt and beat lightly.
- Add oil to a cast-iron skillet or pan on medium heat. Saute the onion until slightly caramelised, then add the zucchini and sweet corn. Cook for 30 seconds.
- Add the eggs. Cook for 1-2 minutes or until the edges of the eggs turn light brown.
- Transfer the pan or skillet into the oven and bake for 10 minutes. Broil for another minute or until the surface is nicely browned.
- Remove from the oven, slice and serve. It is best eaten warm.
