
Scallion oil noodles is a Taiwanese dish that uses five ingredients and takes only 15 minutes to prepare. Known as “cong you ban mian”, it is basically noodles tossed with oil infused with scallions, also known as spring onions.
Seasoning sauces add to the savoury flavour, resulting in a tasty meal that is perfect for breakfast or lunch. Try it with a glass of soya bean milk!
Ingredients
- 3 tablespoons cooking oil
- 2 stalks spring onions, roots trimmed and cut into strips
- 225g fresh noodles
- 1 tablespoon oyster sauce
- 1 teaspoon soy sauce
Method
- Heat a wok with the cooking oil until it begins to smoke.
- Add the spring onions and stir continuously until they are aromatic and are moderately seared. This process will release their full fragrance and infuse the oil. Set aside.
- Boil a pot of water and cook the noodles al dente. Do not overcook – the noodles should still be somewhat springy. Drain and transfer into a bowl.
- Add the scallion oil, oyster sauce and soy sauce into the noodles. Using a pair of chopsticks, toss to blend well with the oil and sauces. Serve immediately.
