The second movement control order has meant that everyone’s back to either takeaways or delivery when it comes to their meals.

To those who love to cook, there’s no better time than now to roll up your sleeves and cook up some delicious and nutritious meals in your kitchen.

If you have the time, launch into something more adventurous but if you’re bogged down with work, take the practical route and try your hand at a recipe that delivers on taste but doesn’t take forever to cook.

Today, why not try one of the easiest meals you can cook using a sous vide machine – duck breast.

This is one dish that takes a couple of hours before its ready but only requires approximately five minutes of hands-on cooking time in the kitchen. What more could you ask for?

Ingredients

  • 1 smoked duck breast (or normal duck breast, seasoned well with salt)
  • Some aromatics (optional – dill, rosemary)
  • A side dish – asparagus in this instance, cooked with garlic

Method

  • Place the duck breast in a vacuum bag with the aromatics of your choice.
  • Turn the sous vide machine on and sous vide the meat for two hours at 57°C.
  • Remove, pat dry, and sear the meat skin side down until crispy for two to three minutes.
  • Use the duck fat released from the searing process to cook the asparagus for two to three minutes.
  • After letting the duck breast rest for three to five minutes, slice the meat and serve.

TIP: Always have some duck breast stored away in your freezer for this dish. It’s super easy to prepare and takes the headache out of wondering “what to eat” on a busy day. Invest in a sous vide machine especially if you love to eat meat, it’s worth it!
