Makan Kitchen’s iftar buffet blends old and new favourites

Get ready to indulge in a feast that features both classic dishes and modern culinary creations at DoubleTree by Hilton KL.

This year’s theme for DoubleTree’s Ramadan buffet at their restaurant Makan Kitchen is Merentasi Tradisi: Sajian Dulu dan Kini, which celebrates the blending of traditional and contemporary dishes.

“The concept is to use dishes from our grandmother’s time and mix those nostalgic flavours with newer modern innovations,” head chef Mohamad Zulkarnean Suhaili told FMT Lifestyle.

One of the most eye-catching offerings at the buffet table has got to be kambing golek, a whole lamb marinated with kuzi spices.

Seasoned and roasted to perfection, the meat is juicy, succulent and best enjoyed with the roasted veggies on the platter. Do remember to take the black pepper or mint sauce on the side to elevate the flavours too.

Not a fan of lamb? Try the ayam golek then, which is equally appealing and delicious.

You can also find the classic bubur lambuk daging here. Warm and comforting with delicious small bites of meat mixed into the porridge, it’s the perfect introduction to what would be a magnificently satisfying meal.

Beef lovers would be happy to see the Australian beef shank kerutup. Rich, slightly spicy and packed full of savoury flavours, it’s a scrumptious curry dish that’s best eaten with nasi minyak.

On the other end of the buffet, it’s seafood galore, served fresh and chilled. There’s a selection of cooked seafood too, including ikan masak lemak cili api, sotong tumis sambal belacan and gulai udang.

There’s also a noodle station, where diners can choose the types of noodles and condiments they love, customising their bowls with either nyonya curry laksa or a vegetarian broth.

Of course, it won’t be a breaking-the-fast buffet without dates. There are a few types of dates to choose from, including Medjool, Mariami, Rotab and Ajwa.

Head over to the Indian kitchen for more mouth-watering delights. Sample beloved dishes like kadai chicken, lamb varuval, young jackfruit tikka masala and many more. You also get to choose from chicken or fish tikka tandoori, to be eaten with naans in assorted flavours like butter, garlic and cheese.

For lovers of Chinese food, there’s also a kitchen catered to you on one side of the restaurant. Be spoilt for choice with dishes like roasted free range chicken, steamed barramundi with fermented chili bean sauce, double boiled village chicken consommé and wok fried tiger prawn with black bean sauce.

If there’s still room left for dessert, try making your own shaved ice at the ice kacang cart with condiments of your choice.

Sweet treats like ice cream, assorted cakes, nyonya kuih and Malay cookies will end your meal on a high note.
