Makan Kitchen celebrates local produce with a hearty buffet

DoubleTree by Hilton KL is doing its part to encourage local food sourcing and to reduce food waste through its Eco-Epicurean Buffet.

Being a multicultural country, Malaysia has a lot to offer when it comes to food. And many of the herbs and spices found right here in the country produce some of the most flavourful dishes known in this part of the region.

Recognising that there is little need to look outside Malaysia for fresh produce when it comes to cooking good food, DoubleTree by Hilton Kuala Lumpur has introduced the Eco-Epicurean Buffet at Makan Kitchen, available throughout this month.

“To reduce our carbon footprint when transporting the raw ingredients, we choose to use local suppliers within an 80km radius from the hotel itself,” food and beverage manager Vincent Liew told FMT Lifestyle during a media preview of the buffet recently.

“I’d say about 90% of what we use here is sourced from either Batu Caves or the Chow Kit area.”

The seafood used in the buffet is also sourced from MSC and ASC-certified fisheries, which are those that meet international best practices for sustainable fishing.

With that said, let’s dive in and see what gastronomical delights await!

The fresh seafood here is to die for. Served on ice to preserve its freshness, seafood lovers will be pleased with the selection of crabs, mussels, prawns and scallops here.

Not a fan of raw seafood? Then have yours cooked instead. The ikan asam pedas, black mussel with lemongrass and turmeric, as well as the flower crab with pounded chili paste will leave you wanting seconds… and possibly even thirds.

It wouldn’t be a Malaysian buffet without the street food everyone loves so much. So, make a bee-line for the satay. These chunks of chargrilled marinated meat, dunked into the richly spicy-sweet peanut sauce, are perfect as an appetiser.

The noodle station is yet another crowd-pleaser with heaps of bihun, kuey teow and yellow noodles ready to be enjoyed with either flavourful chicken soup or rich curry laksa.

If you’re craving for hot and spicy Indian food, head over to the stacks of butter naan that you can enjoy with locally sourced sea bass varuval, butter chicken, prawn tandoori and much more.

For lovers of Chinese food, you’ll be spoilt for choice – there’s double-boiled village chicken with ginseng, roasted free-range chicken, steamed fish with ginger and spring onion paste, all of which is best enjoyed with the Asian staple: rice.

If you still have room in your stomach, the chocolate fountain at the dessert table will delight you and the kids no end. There are marshmallows and lady finger biscuits to be dipped into the gooey melted milk chocolate, as well as a variety of cakes, mousses and brownies.

And what’s a local meal without some ice kacang with all its cheeky accompaniments for dessert?

As part of their sustainability efforts, the hotel has also addressed the issue of food waste.

“We are partnering with animal welfare groups such as Voice for Paws, meaning the food waste will go towards feeding hungry strays, other than using our leftovers to make local organic fertilisers.”

From using only locally sourced produce to going the extra mile to reduce food waste, the Eco-Epicurean Buffet at Makan Kitchen is a conscious effort to make the world a better place.
