With presents under the tree and the home all decked with boughs of holly, all that’s left is the merry feast that everyone will gather around on Christmas day.

For this Christmas, veteran chef Timothy Sebastian is cooking up something special that will make your Yuletide meal one to remember.
From Dec 15 until Jan 1, diners can feast on Sebastian’s Special Christmas Roast Chicken, a gargantuan meal meant for takeaway only.
Size is not everything though; what does it taste like? In one word – perfection. It’s succulent, flavourful and filling – everything a truly hearty Christmas meal should be.

Speaking to FMT, Sebastian said that while the seasoning for his roast is simple enough, it’s the 48-hour brining process that makes all the difference to the taste and texture of the final product.
“Brining it for 48 hours makes the muscles absorb the brine, thus making it juicier and tender,” he said, adding that for this reason alone, all orders must be placed one week in advance.
“We slow roast it until it’s nice and brown and just season it with salt and pepper, letting it keep its natural flavour. It’s all chicken with a hint of herbs.”

Served alongside this roast chicken is a savoury gravy and seductive pork stuffing. Rich in flavour, every forkful of the stuffing is worth relishing and best enjoyed with a morsel of chicken.
The ‘sides’ in this set meal include Truffle Mash – soft and fluffy potato mash infused with the distinctive aroma of truffles.

To make this a well-rounded meal, feast on sweet and crunchy baby Glazed Carrots, and a serving of cheesy Broccoli Gratin.
But what if you prefer something that doesn’t cluck as much as it oinks? For your piggy pleasures, Sebastian is happy to offer his Roasted Pork Knuckle.

This meaty delight is encrusted with a light and crispy crackling, which is hard to resist nibbling on. However, that edible shell conceals the true prize of the dish, the juicy and succulent meat underneath which is tender in texture and rich in flavour.
Needless to say, anyone who has the privilege of having this dish on their Christmas table is in for quite the memorable treat.

The extensive preparation for this dish requires a minimum of two days for advanced booking.
According to Sebastian, the Special Christmas Roast Chicken can easily feed up to four people, while the Roasted Pork Knuckle can be enjoyed by three.
