Crispy, succulent bacon fried rice

Have any leftovers after making a continental breakfast? Here's a quick, simple way to use up that open pack of bacon.

This fried rice is so easy to make but will result in an absolutely delicious meal thanks to the succulent flavour of bacon. This is a good way to use up that open pack of bacon after you’ve made a continental breakfast.

Feel free to replace the bacon with luncheon meat or, for a halal version, use turkey bacon or any other form of processed meat. A few extra ingredients and voilà! You will have a simple meal for one.

Ingredients (non-halal)

  • 3-4 stripes bacon
  • 1 egg
  • 1 clove garlic, chopped
  • 1/2 stalk leek, finely sliced
  • 1 cili padi, chopped (optional)
  • 1 tablespoon dark soy sauce
  • 1 serving cooked rice
  • 2-3 shiitake or button mushrooms, sliced
  • cooking oil
  • Salt and pepper to taste

Method

  • Heat up a frying pan and fry the bacon until it starts to crisp. Oil is not needed unless you are using turkey bacon or any other meat alternative.
  • In the leftover oil, scramble the eggs lightly and set aside.
  • Heat up some cooking oil if there is none left. Fry the garlic, leek, mushroom and cili padi.
  • Add the rice and lightly stir-fry. Add dark soya sauce, salt and pepper, but go easy as the bacon is already salty.
  • Finally, add the bacon and egg and mix thoroughly.
  • Dish it up and serve hot.

Tip: You may replace the leek with spring onion.
