Lotus root soup: a wholesome bowl of comfort

NON-HALAL: Most Cantonese families never fail to have their meals with soup. In fact, they are famed for cooking up some very tasty broths.

But for really savoury soup that won’t disappoint your tastebuds and belly, have a go at this recipe featuring lotus root with dried honey dates and pork ribs.

The taste of the pork ribs complements the sweetness of dried honey dates and the end result is a very light, pleasing, and refreshing soup that you just won’t get enough of.

Taste aside, the lotus root soup does pack an array of powerful nutrients that promote good health. It is rich in dietary fibre, potassium, iron and vitamins B, naturally making them one of the healthiest foods.

Ingredients:

  • 400g lean pork ribs
  • 1 lotus root
  • 2 dried honey dates
  • 8-10 dried red dates
  • 6 cups water
  • Salt to taste

Instructions:

  • Cut the pork ribs into short lengths and set them aside.
  • Peel off the skin of lotus root and cut into slices.
  • Soak the dried honey dates and dried red dates in warm water for five minutes.
  • Bring the pot of water to boil and add in all the ingredients.
  • Cover the pot and simmer for an hour or until well cooked. Add salt to taste.
