Taking the humble boiled potato up a notch

Boiled Potatoes with Parsley calls for just five ingredients and five minutes prep for a delicious accompaniment to myriad mains.

Boiled Potatoes with Parsley are quick, fast and easy to make. It’s also delicious and goes well with many main dishes such as baked cod.

Ingredients

  • Water, for boiling
  • 1 tablespoon salt, for boiling
  • 450 g baby potatoes, red and yellow
  • 3 tablespoons unsalted butter, melted
  • 1/2 teaspoon salt
  • 3 dashes ground black pepper
  • 2 tablespoons chopped Italian parsley

Method

  • Fill a stockpot halfway with water and salt and bring it to a rolling boil.
  • In the meantime, clean, scrub and rinse the baby potatoes.
  • Boil the potatoes for 15 minutes. Drain and run cold water through the potatoes.
  • Slice the potatoes into wedges and combine with the melted butter, salt, pepper and parsley. Stir gently to mix well. Serve the boiled potatoes immediately.
