Nasi Lemak Goreng

This dish is a delightful combination of the traditional Fried Rice as we know it but using the main components of Nasi Lemak as its key ingredients.
It makes for a hearty, delicious meal any time of the day, for everyone in the family.
Ingredients:
Coconut rice
- 6 cups rice
- 3 cups coconut milk (santan)
- 4 cups water
- 1 1/2 tsp salt
- 6 pandan leaves
Sambal ikan bilis
- 200g anchovies (ikan bilis)
- 150g red chilli (sliced)
- 50g garlic (sliced)
- ½ tsp salt
- 2 tsp sugar
- 20g belacan
- Cooking oil
- Tamarind juice
- Soy sauce
Extra
- 2 eggs
- Sliced cucumber
Method:
Rice
- Rinse rice with clean water three times, then place in an electric rice cooker.
- Add coconut milk, water, salt and pandan leaves.
- Cook for 25 minutes.
Sambal ikan bilis
- Using a blender, blend red chilli, garlic and a little water until smooth.
- Heat oil in a skillet on medium high. Add sliced onions and fry until light brown. Add in the anchovies and cook briefly until golden brown.
- Then add the blended chilli paste and cook on low heat for five minutes. Now, add the belacan and some water if the mixture is too dry.
- Once the chilli paste is cooked thoroughly, add a little tamarind juice. Add salt and sugar to taste. Leave to simmer for five minutes or until sauce is thick.
- Set aside.
Nasi Lemak Goreng
- Heat a little oil in the pan and scramble one egg. Add one bowl of coconut rice to the egg and stir-fry.
- Add 1 tablespoon of sambal ikan bilis and a little soy sauce.
- Fry the remaining egg sunny side up.
- Cut cucumber into thick slices.
- Top the Nasi Lemak Goreng with the fried egg and serve with slices of cucumber on the side.
- This dish is also delicious served with a meat of your choice such as fried chicken or fried fish.
