
If you’re stuck with a quarter slab of pumpkin in the fridge and are tired of cooking the same old recipes with it, how about thinking out of the box and breathing new life into the ordinary omelette?
Instead of scouring the internet for a recipe, try this unique combo of pumpkin and egg, created by none other than KY himself.
The dish is fairly easy to create, requiring simple ingredients and takes about 15 minutes from stove to table.
The result is a sweet and savoury dish that gets a thumbs up for taste.

Ingredients:
- 1/4 small pumpkin, cut into chunks
- 3 eggs, whisked
- a bunch of cilantro, remove stems
- 4-5 bulbs garlic, chopped
- salt and pepper to taste
- 2 tablespoons cooking oil
Method:
- Cut pumpkin into bite sizes and steam for 10 minutes.
- Once done, heat-up a frying pan with cooking oil.
- Sauté garlic until fragrant, then add the steamed pumpkin.
- Next add the whisked egg, and lastly the cilantro.
- Add some salt and pepper if you wish
- Fry until the eggs are about 80% cooked through, then remove from the pan and serve immediately.
