
Typically, green juices and smoothies are packed with fruits and vegetables. True to its name, these are predominantly of the green variety, though not always necessarily so.
If you’re a health freak, the concept of having to drink your greens should not be new to you. Here’s a recipe for a green apple smoothie with a decidedly local twist, thanks to the use of ulam raja and coriander.
These can pack quite a punch, so go easy to start with. Once you’re down with the flavour, feel free to add more!
Ingredients (for two medium glasses)
- 3 green apples, cored and cut into cubes
- 2 tsp (about 2-3g) coriander
- 2 tsp (about 2-3g) ulam raja
- 1 lemon, juice only
- 5 cubes frozen ginger juice (see below on how to make this)
- 2 tbsp honey
- 320ml soda water

Method
For the ginger ice cubes
- Peel some ginger and blend it with water at a ratio of 1:3.
- Strain the mixture to remove any fibrous parts.
- Pour the liquid into ice cube trays and freeze overnight.
For the smoothie
- Put all ingredients into a blender, except the soda.
- Blend until smooth. If necessary, add a little soda water to aid the blending process.
- Pour the blended mixture into medium-sized glasses or a few smaller glasses. Top up with equal amounts of soda water.
- Serve cold and enjoy!

Tips
- This does not make a great party drink as the apple juice will oxidise and turn the juice brown.
- Make extra ginger ice cubes and add to other drinks for a little oomph.
